The Best Moist and Crunchy Banana Bread Recipe

There is only one logical thing to do when your bananas become too ripe. Banana Bread! And because it has a fruit as the star ingredient, it has to be healthy right? I think I’ve just convinced myself to make this recipe again hopefully it worked for you too.

If that wasn’t convincing enough than reading this recipe will. This banana bread is the perfect balance between moist and crunchy. It’s so good that it tastes better the next day in my opinion. But you’ll just have to make it and find out for yourself.

Banana bread has to be the easiest thing to make. It doesn’t need a lot of ingredients and you don’t need to dedicate a lot of time to making it either!

The Process

First things first prepare you pan. You’ll want to use an 9×5 inch loaf pan and spray it with cooking spray. You can also use parchment paper to line the pan if you don’t trust your cooking spray to remove your bread. You will also need to preheat the oven to 325 degrees.

Now using a medium bowl, combine the flour, baking soda, salt and cinnamon and whisk together until its well combined.

In another bowl, add the egg, sugar and oil. Mix it until its combined and thick. In a separate bowl or plate, mash the bananas until it no longer resembles a banana. Now you can start adding the dry ingredients to the wet ones. Once its all combined your mixture will be very dry and crumbly.

You can now add the mashed bananas, vanilla and buttermilk to the crumbly mixture. Once it’s all combined, fold in about 3/4 of the pecans into the mixture. You can then pour the mixture into your prepared loaf pan and sprinkle the remaining pecans on top.

Depending on your oven the baking time will vary. Around the hour mark start checking up on the banana bread every 5-10 minutes. It’ll be ready once a toothpick inserted in the middle comes out clean.

Ingredients
  

  • 2 cups all purpose flour
  • 1 tsp baking soda
  • ¼ tsp salt
  • ½ tsp cinnamon
  • 1 egg
  • 1 ¼ cup sugar
  • ½ cup vegetable oil
  • 2 tbsp buttermilk
  • 1 tsp vanilla
  • 3 bananas (ripe)
  • 1 cup pecan pieces

Instructions
 

  • Prepare a 9×5 loaf pan by spraying with cooking spray. Preheat oven to 325℉.
  • Add flour, baking soda, salt and cinnamon to a bowl and whisk until combined.
  • In another bowl, add the egg, sugar, and oil and mix until combined.
  • In a separate small bowl, mash the bananas using a fork.
  • Slowly add the dry ingredients to the wet, mixing well until all combined. The mixture will be dry and crumbly.
  • Add the buttermilk, vanilla and bananas. Mix until combined.
  • Fold 3/4 of the pecans into the mixture.
  • Pour the mixture into prepared pan. Sprinkle the remaining pecans on top.
  • Bake for 1 hour or until a toothpick inserted in the center comes out clean.
